  • 2 egg yolks

  • 1 tbsp granulated sugar

Instructions

  1. Place the egg yolks, sugar, and vanilla extract in a heatproof bowl over a bain-marie.

  2. Whisk continuously until the mixture becomes pale, thick, and creamy.

  3. Remove it from the heat and allow it to cool to room temperature.

  4. In a separate bowl, whip the cream and cream cheese until smooth and stable.

  5. Gently fold the cooled egg mixture into the whipped cream base.

Instructions

  1. Whip the cream and cream cheese together until the mixture is smooth and firm.

  2. Add the vanilla extract.

Ingredients

  • 110 g freeze-dried strawberry powder

  • 150 ml water

  • 3 tbsp chicory syrup

  • 1 tbsp vanilla extract

Instructions

  1. Gradually mix the strawberry powder with the water until a smooth mixture forms.

  2. Add the chicory syrup and vanilla extract.

  3. Stir until all ingredients are evenly combined.

  4. Transfer the mixture to a freezer-safe container.

  5. Freeze for approximately four to six hours.

  6. During the first two to three hours, stir the mixture thoroughly every 30–45 minutes to reduce the formation of large ice crystals.

  7. Allow the sorbet to soften at room temperature for 5–10 minutes before serving.
