Strawberry Raffaello Balls with Freeze-Dried Strawberry Powder

Freeze-dried strawberry powder brings intense natural colour, authentic fruit flavour, and a unique sensory experience. Thanks to its low moisture content and easy dosage, it is especially suitable for confectionery, bakery, chocolate, fillings, creams, coatings, and premium snack applications.
Ingredients
Base
300 g white chocolate
200 ml whipping cream or coconut milk
100 g coconut flour
100 g almond flour
50 g freeze-dried strawberry powder
For coating
Shredded coconut
Freeze-dried strawberry powder
Instructions
Heat the whipping cream over a water bath and melt the white chocolate into it.
Divide the mixture into two parts: 2/3 and 1/3.
Mix the coconut flour and almond flour into the larger 2/3 portion.
Add the freeze-dried strawberry powder to the smaller 1/3 portion and mix until the colour is evenly distributed.
Chill both mixtures in the refrigerator until firm enough to shape.
Shape a small ball from the strawberry mixture.
Wrap it with the coconut–chocolate mixture to form a smooth ball.
Roll the balls in shredded coconut.
Chill or freeze until firm.
Finally, coat lightly with freeze-dried strawberry powder for a vibrant finish.
