Ingredients
Shells
250 g almond flou
250 g granulated sugar
250 g icing sugar
190 g egg whites
60 g water
3 drops food coloring
Filling
200 g cream cheese
1–2 tbsp ground pecans
Garnish
freeze-dried figs
microgreens
prosciutto
black sesame seeds
Method
Weigh all ingredients precisely.
Thoroughly combine the almond flour and icing sugar, then sift the mixture through a fine sieve at least twice.
Divide the egg whites into two equal portions of 95 g each. Mix the first portion with the almond flour and icing sugar mixture, then add the food coloring.
Place the second portion of egg whites into the bowl of a stand mixer and add a pinch of salt.
Bring the granulated sugar and water to a boil, stirring constantly. Once the sugar has dissolved, stop stirring and begin measuring the temperature. When the syrup reaches 112°C, start the stand mixer on medium speed.
Once the sugar syrup reaches 118°C, increase the mixer to high speed and slowly pour the syrup into the egg whites.
Whip on high speed for exactly 5 minutes.
Gradually fold the whipped egg whites into the almond mixture.
Gently work the mixture into a smooth, cohesive batter.
Preheat the oven to 140°C fan.
Transfer the batter to a piping bag fitted with a round tip and pipe even circles onto a baking mat.
Bake for exactly 12 minutes. Remove from the oven and leave to cool completely on the mat.
Filling and Assembly
Mix the cream cheese with the ground pecans and transfer the filling to a piping bag. A piping tip is optional.
Fill the macarons with the cream cheese mixture and sprinkle with a little extra ground pecans.
Garnish with a slice of prosciutto, freeze-dried figs, microgreens, and black sesame seeds.
