Fluffy Fruit Marshmallows for Kids and Grown-Ups

In this fluffy fruit marshmallow recipe, it brings a real fruit character to a classic sweet treat while supporting creative product development for children and grown-ups.

Ingredients

For the sugar syrup:

180 g granulated sugar
60 g water
2 tbsp chicory syrup

To bloom the gelatin:
6 sheets gelatin
80 g warm water

For flavoring and coloring:
20 g freeze-dried fruit powder

For decoration:
Pieces and powder of freeze-dried fruit

Tip: Tart and fresh fruits such as raspberries, sour cherries, kiwi, or apricots pair beautifully with sweet marshmallows.

Method:

  1. Weigh out 80 g of warm water and soak the gelatin sheets in it to bloom.

  2. Dissolve the sugar, chicory syrup, and 60 g of water, then heat the mixture to 118 °C.

  3. When the temperature approaches 110 °C, turn on a stand mixer or hand mixer and whisk at medium speed.

  4. Once the sugar syrup reaches 118 °C, increase the speed to maximum and pour in the sugar syrup.

  5. Whisk until you get a thick white mixture, about 5 minutes.

  6. Finally, mix in the freeze-dried fruit powder.

  7. Pour into a mold lined with baking paper and leave to set in the refrigerator for at least 24 hours.

  8. Cut into any shapes you like, then coat them in freeze-dried fruit powder and decorate with pieces of freeze-dried fruit.
